It's early October in southern Canada, and what beautiful colors we have on the trees! This is a sugar maple. Maple trees are especially famous for their fabulous foliage, and the sugar maple is one of the primary sources of delicious Canadian maple syrup. Maple leaves change color because the tree stops producing chlorophyll, which creates the green hue, as the weather cools down and winter approaches.
